Lime and Cashew Bliss Balls

I came up with this recipe because I needed to make a quick and easy snack for a website video shoot day we were having at my house. We had a few film crew people here all day, as well as some of my lovely customers arriving for the testimonial filming so I needed high energy, healthy snacks stat!

I got up early and whizzed these babies up so quickly and easily so thought it was definitely one to share on the blog for anyone else who likes quick and easy with minimal ingredients.

Bliss Balls are so easy to make and are such a good 'grab and go' high energy snack and as I had some lovely lemons sitting in my fruit bowl I wanted to incorporate them.

I'd never made a bliss ball with lemon and it was soooo good! Then a few batches later I made them with limes instead and it was even better so that's what I make them with now. So, really these could be made with either a lemon or lime and you won't be disappointed either way, so whatever takes your fancy or whatever you have in your fruit bowl will work.

Ingredients:

2 cups of raw cashews

1/2 cup of desiccated coconut (plus extra for rolling the balls in later)

3 tablespoons of vanilla protein powder (If you don't have protein powder, use 1 teaspoon of vanilla bean powder or paste)

3 tablespoons of maple syrup (you could also use honey or rice malt syrup if preferred)

The juice of 1 whole lime or 1 whole lemon

1 tablespoon of coconut oil

a pinch of good quality salt

Method:

Place all ingredients in a high speed blends and whizz until it looks like cookie dough.

Grab a golf ball size amount, squeeze in your hand to condense and then roll between you palms until you have a ball.

Roll in some desiccated coconut.

Place in the fridge for an hour to firm up.

These will store well for at least a month in an airtight container in the fridge.

This recipe makes about 18 golf ball sized bliss balls!
